These are the cookies I made for every single BBQ Workshop we ever ran, everyone seemed to enjoy them, so here’s the recipe!
Cranberry, Oat & White Chocolate Cookies
Ingredients
125 g unsalted butter
150 g light brown sugar
1 medium egg
1 teaspoon vanilla extract (optional!)
1 teaspoon ground cinnamon
150 g self raising flour
150 g jumbo rolled oats
1/2 tsp sea salt
150g Craisins (dried cranberries)
100g white chocolate chips
Instructions
Preheat your oven to 175C.
Add butter and sugar to a bowl and beat till creamy
Add egg and vanilla, beat again.
Add in the plain flour, oats, cinnamon and salt and beat till a cookie dough is formed
Add in your craisins and white chocolate chips, mix until combined.
Place balls of dough onto a lined baking tray. I put 6 cookies per tray and press them lightly into discs with wet fingers.
Bake the cookies in the oven for 10-15 minutes.
Once baked, leave them to cool on the tray for at least 30 minutes, as they will continue to bake and set, whilst cooling
